One thing I don't often look forwad to is birthday cakes that look good but don't taste yummy. I think the taste is more important, even when it comes to wedding cakes.

Salmon sushi is becoming more common. Sushi itself has become increasing popular in the United States within the past thirty years. It's decorative design and array of possible ingredients makes it a benefit to any party. The number of ingredients that can be used in sushi is practically endless, however, salmon is a very popular ingredient and for many good reasons.
Sushi is in itself a nutritious food choice. It is low in artificial substances and low in sugars. Sushi can be made with different flavorful and nutritious vegetables and fishes adding to its appeal. Salmon is a good addition for sushi because it is highly nutritious even by itself.
Studies have shown that salmon is high in Vitamin D. This is very important especially during the winter months when the sun is not around to give its high amount of required vitamin D. Probably the most popular choice would be salmon and cream cheese sushi rolls. The combination is endless. Whatever you like with salmon, can be rolled into sushi.
Another option for salmon sushi it to mix tiny pieces of smoked salmon into the prepared rice and vinegar and roll it with the nori wrap. This is simple and mixes the flavors of the salmon and rice very well. It is a particularly good choice for those who really do not like to eat much fish, but know they should because the flavors are more subtle in the salmon and rice mixture.
If you love the taste of salmon, just placing a square of fresh raw salmon over a ball of rice mixture and covered with a small bit of nori can be a perfect appetizer. Sushi salmon is a tasteful treat for any sushi lover. Just remember to follow all safety guidelines for serving raw fish.

Old Fashion Salads Add Pizazz to Modern Meals!

Salads can be great as a meal or as a side to a meal. These old fashion salad recipes include recipes for salads using Veggies, Tuna, and Fruit. There is bound to be one you and your family will love! Let's start out with the Tangy Vegetable Salad which is one of my favorites. Since I am a gal who loves her vegetables, this has been one of my favorite salads for many years. I think one of the reasons I love vegetables so much is because I was raised in the country where we grew most of our vegetables. I loved helping plant the seeds, watching the plants grow, and waiting with great anticipation to enjoying the vegetables when they were ready. I also loved helping my mother and grandmother can the vegetables then enjoying them on cold snowy days in the wintertime. I believe my love of vegetables was planted early and I know it runs deep. Now that I am a diabetic, I have changed the sugar in this recipe to Splenda granulated. It is still just as good. However, I am printing my original version here for you. Personally, I do not like tuna but my family does. I like this Veggie Tuna Salad recipe because it gets them to eat their vegetables, too! The Pretty Peach Salad makes a great addition to a buffet table or to a salad bar.
TANGY VEGETABLE SALAD
1 can baby peas
1 can Shoe Peg corn
1 can French-cut green beans
1/2 cup chopped celery
1 chopped onion
1 bell pepper, chopped
1/4 cup oil
1/4 cup vinegar
1/4 cup sugar
Drain all the canned vegetables then mix all the ingredients together in a bowl with a lid. Place lid on bowl and refrigerate several hours or overnight.
This makes a great 'make ahead' dish for busy cooks.
VEGGIE TUNA SALAD
1 can (6.5-oz) tuna, drained
1 cup shredded carrots
1 cup diced celery
1/4 cup minced onion
1 cup mayonnaise
1 can (4-oz) shoestring potatoes
In a large bowl use a fork to flake the tuna. Add the carrots, celery, onion, and mayonnaise; toss until the tuna is coated thoroughly with mayonnaise. Place in a bowl with a lid, cover, and refrigerate. Just before serving time, remove from the refrigerator and fold in the potatoes.
Serves 4 to 6
PRETTY PEACH SALAD
4 fresh or canned (drained) peach halves
2/3 cup cottage cheese
2 tbsp toasted slivered almonds
2 tbsp drained and chopped maraschino cherries
4 tbsp flaked coconut
crisp salad greens for lining plate
In a medium bowl, mix the cottage cheese, almonds, and maraschino cherries until combined. Arrange the peach halves, centers up, on a salad greens lined plate. Divide the cottage cheese mixture evenly and fill the centers of the pears. Sprinkle the coconut over the top.
NOTE: If using fresh peaches, dip in lemon juice or sprinkle with fruit fresh to keep them from turning dark.
Also, this same recipe works great using pears instead of peaches.

How To Make Fresh Homemade Kefir

Kefir is a fermented type of milk that is similar to the consistency of grocery store yogurt drinks. I often refer to it as a delicious drinkable yogurt beverage. They have lots of healthy flora and probiotics that have numerous health benefits.
Kefir is great in smoothies, poured over cereal or used in place of cream for deserts, coffee and tea.
The kefir "grains" are live active cultures consisting of yeast and bacteria and are called grains mainly because of their appearance. Kefir grains can be bought online or at some health food stores
So here is a delicious recipe that you can make at home.
Ingredients:
1 tbsp kefir grains
1 quart whole or 2% milk
Procedure:
1. Add the kefir grains and milk in a glass jar and fill it up to the top.
2. Cover with a clean cloth and elastic band and then set it aside in your cupboard or your kitchen counter.
3. Wait 1 to 2 days; stirring periodically with a plastic spoon (this is important because metal damages the cultures).
4. When thick, strain out the kefir grains with a plastic strainer (do your best to keep the grains intact), pour back into a clean jar and place in the fridge or repeat the process again. You can use these same grains because they will continue to remain active.
How to make coconut kefir
Coconut kefir is also a very tasty alternative. Unlike kefir made from cows' milk, coconut milk kefir doesn't have a strong fermented or sour flavor. It is nice and tangy with the naturally sweet taste of coconuts.
The texture is rich and smooth and is also slightly thinner in consistency than yogurt. Both the flavor and texture of fresh homemade kefir is in my opinion a lot better than any store-bought coconut milk kefir.
Use the same recipe as described above but change the ingredients so that instead of using one quart of milk, use two cans of coconut milk.
Also, make sure to re-hydrate your kefir grains in milk for 5 to 7 days at room temperature before making coconut kefir.
If the kefir grains are dehydrated, as they are from most online sources, you must make sure to first re-hydrate them in cows' milk.
Combine the grains with 1 cup of cows' milk and set out at room temperature in a loosely covered glass container for 5 to 7 days. Then strain the grains out each day and place them in a fresh cup of milk.
When the batches of milk take and smell slightly fermented and are thick, your grains are ready.

Russian Soup A Rich History Of The Country's Culture

Russian soup is the main staple in the diet of people every day. It's not unlike any other culture in the world. It always has been such an important part of daily meals and the variety of different types to choose from is really extraordinary.

There are many categories of Russian soup that are hot and cold.

Cabbage based soups such as the shchi
Mushroom, milk and meat noodle soups
Vegetable and water based stews
Soups that are chilled such as tyurya, kvass, botvinya, and okroshka
Vegetable and grain type soups
Ukha fish soup as well as many other kinds that include different types of fish

Hot Russian soup

One of the principle hot soups that are usually served for the first course in most Russian meals for more than 1000 years is cabbage or Shchi soup. This is one of the soups that is not exclusive to any class of people. It doesn't matter if someone is rich or poor; Shchi is a tradition and choice of mostly all Russian people. It is usually eaten at all times of the year. In addition, rye bread is often eaten along with almost any kind of soup that is served.

Other soups served hot are:

Rassolnik

This is a soup served hot that has a sour and salty cucumber base. Interestingly, this isn't an old traditional recipe. It was made in the 19th century. The name originates from rassol, which in Russian means pickle water. It can be served either vegetarian style, but quite often beef, kidneys or veal are added to the pickle base along with potatoes, vegetables and barley to balance the sour taste.

Solyanka

This is a thicker soup that adds cabbage, smetana, rassolink, spices and other vegetables like lemons, tomatoes, capers, olives, pickled and salted mushrooms to produce a very salty and sour soup base.

Cold Russian soup

One of the popular types that are eaten cold with sour milk or kvass is Okroshka. The principle ingredients with both of these soup types are vegetables combined with cold meats or fish that have been boiled.

Vegetables that are added to this type of soup can make it spicy or neutral. For a spicy flair, you can add dill grains, green onion, celery, chervil, parsley and tarragon. For the more neutral variety add potatoes, carrots, rutabagas, turnips and fresh cucumber.

As far as the sour milk that is included in some of these cold soups, it is natural sour milk that has been well shaken and combined with seed oil, pure water as well as ground garlic. You can often replace the sour milk and use kefir instead, but many cold soup purists say that it changes the taste of the traditional okroshka.

To conclude, if you want to really experience the country's cuisine, you need to eat the many varieties of Russian soup that are available with every meal. You can be rest assured that almost every meal that you eat will include some form of soup. It's the way of traditional cuisine and is very good for you to boot.

Salads That Are Great For Diabetics and Others

The salad recipes in this article are perfect for diabetics. But that doesn't mean they are not tasty for others as well! You can serve these salads to the whole group. Everyone will have a tasty salad and the diabetics will be safe enjoying them, too! The Ginger Noodle Salad is a great salad that uses pasta in a unique way and has a Chinese flavored dressing. The Broccoli Salad uses golden raisins combined with broccoli, bacon, and sunflower seeds for a wonderfully different salad. If you are looking for a good homemade dressing for your favorite green salad, try this Homemade Celery Seed one.
GINGER NOODLE SALAD
4 oz dry whole-wheat spaghetti or linguine
Cook pasta according to the package directions. Toss with the dressing below:
NOODLE DRESSING:
1 tbsp minced ginger
3 tbsp Splenda granular
1 tbsp catsup
1/4 cup lite soy sauce
1/4 tsp Chinese chile paste*
1 tbsp water
2 tbsp lime juice
1 tsp canola oil
2 cups mixed salad greens
4 lime wedges for garnish, if desired
In a medium saucepan combine the ginger, Splenda, catsup, soy sauce, chili paste, and water. Bring to a simmer over medium-low heat and simmer for 1 minute. Remove from the heat then add the canola oil and lime juice. Using a wire whisk, blend well.
Add the cooked and drained noodles to the dressing and stir in well to coat.
To serve, divide the salad greens evenly among 4 salad plates. Top with the noodles. Garnish each with a lime wedge, if desired.
*If you don't have the Chinese chili paste, substitute a small amount of crushed red pepper to taste.
BROCCOLI RAISIN SALAD
1 bunch fresh broccoli, broken into florets
1/2 cup golden raisins (omit if necessary)
1 small red onion, chopped
1/2 cup fat-free mayonnaise (not salad dressing-too sweet)
1 tbsp vinegar
2 tsp Splenda granular
3 strips cooked bacon, broken into bite-sized pieces
2 tbsp toasted sunflower seeds
Combine the broccoli florets, raisins-if using, and onion in a large bowl.
In a small bowl combine the mayonnaise, vinegar, and Splenda until well blended. Pour the dressing over the broccoli, toss to coat, and refrigerate until serving time. Before serving, toss gently and sprinkle with the bacon pieces and sunflower seeds.
HOMEMADE CELERY SEED DRESSING
1 garlic clove
1 tsp salt
2 tbsp lemon juice
1/3 cup olive or canola oil
1/2 tsp celery seed
3/4 tsp dry mustard
1/2 tsp paprika
1/4 tsp Splenda Granulated
1/4 tsp black pepper
1 small jar with a lid. A jelly jar works well.
In a jar mash the garlic clove with the salt. Add the lemon juice, oil, celery seed, mustard, paprika, Splenda, and black pepper. Place lid on jar and shake well to blend.
Refrigerate.
Shake well before using on your favorite salad.
Yield: 1/2 cup

Paleo Diet Recipes

The Paleo Diet, also called the paleolithic or caveman diet, consists of recipes that are natural such as meat, fish, fruit, vegetables, and nuts. These were the foods that sustained people for years and kept us healthy, physically fit and full of energy; people were strong and thriving. But, something happened that caused our eating habits to change.
Agriculture was introduced to your lifestyle. With the introduction of agriculture, came the introduction of sugar laden, highly processed foods such as wheat flour and high fructose corn syrup. The fast, convenient foods that we are so used to eating, are toxic for our bodies and cause many diseases such as cancer, diabetes, auto immune diseases and more.
Paleo Diet recipes only include food combinations that are natural, tasty and without toxins including the following:
Egg Drop Soup - Simple yet nutritious Asian inspired soup.
Ingredients:
-2 eggs
-1 egg yolk
-1/4 tsp of salt
-2 tbsp fresh chopped chives
-1/8 tsp of ground ginger
-3 cups of chicken broth
Cooking Directions:
1. Pour chicken broth into a pot. Medium temp.
2. Add chives, ginger and salt into the pot
3. Mix the eggs
4. Once broth and spices are boiling, slowly pour the eggs into the pot
Stuffed Pork Tenderloin - Scrumptious piece of pork stuffed with artichoke hearts and sun-dried tomatoes.
Ingredients:
-1 2lb pork tenderloin
-1 egg
-Sea Salt
Stuffing Ingredients:
-1/2 medium onion, diced
-1/8 fresh thyme, finely chopped
-1/2 fresh sage, finely chopped
-2 large artichoke hearts, diced
-6 sun-dried tomatoes, diced
-2 cloves garlic, finely diced
-A couple tsp of butter or coconut oil
-1/8 tsp nutmeg
-Sea salt
Directions:
1. Put all the stuffing ingredients into a pan with medium heat. Saute for about 4 minutes or until the onions are a little golden. Remove it from heat and let it cool down completely.
2. Cut a seam through the center of each piece for the stuffing. Spread butter and salt over it. Place meat in a baking pan.
3. Pre-heat your oven at about 450F.
4. Once the stuffing has cooled down completely, mix in an egg and whisk away.
5. Stuff the meat with your stuffing.
6. Put the stuffed pork into the oven and it will be ready in about 30 minutes.
Chocolate Cranberry Pie - A Paleo berry-licious treat that you don't have to feel guilty about.
Ingredients:
Crust Ingredients:
-2 cups of almond flour
-1 egg
-2 tbsp of coconut oil
-1/2 tsp salt
Filling & Topping Ingredients:
-18 oz of frozen cranberries
-1/2 cup of coconut milk
-8 oz of 70% cocoa
Directions:
1. Preheat your oven at 375F.
2. Put your crust ingredients in a blender. Blend it until you get a crumbly dough texture
3. Lightly grease a pie baking dish and put the dough in it. Firmly press the dough to completely and evenly cover the surface of the entire pan.
4. Put the crust in the oven for about 15 minutes. Let it began to turn golden brown.
5. While the crust is cooking, put the milk in a small pot and bring it to a simmer.
6. Once the it starts to simmer take if off the heat right away and pour the chocolate into the pot. Mix it until completely melted. This is your filling.
7. Once the crust is ready take it out of the oven, pour your filling into the crust.
8. Put the pie in the fridge for at least 2 hours.
9. Put frozen cranberries in the oven. Bake for about 10 minutes. Once the berries have started to soften take them out the oven and put them in the fridge as well for about 1 hour.
10. Once the crust and filling is nice and solid and the berries are nice and cool, pour them on top of your chocolate filling.

¼ cup ground flaxseed meal
½ teaspoon baking powder
1 teaspoon cinnamon
1 large egg
1 tablespoon unsweetened applesauce
Put the flaxseed meal, baking powder, and cinnamon into a microwave-safe mug. Stir together until well mixed. Add the egg and applesauce. Mix until smooth. Microwave 2 minutes. Allow bread to cool slightly and remove from the mug.

Sourdough Bread From Scratch at Home

Another big advantage of making sourdough bread machine recipes is that it can be stored for a long period of time. Here is a simple sourdough bread machine recipe that you can prepare from scratch and enjoy at home.
What you will need:
- Bread machine flour or wheat flour - 3 ½ cups
- Granulated sugar - 2 tablespoons
- Active bread machine yeast - 2 ¼ teaspoons
- Salt - 2 teaspoons (this regulates the rising of the bread)
- Warm fresh milk - ¾ cups
- Butter (softened) - 1 ½ tablespoons
- Homemade sourdough starter - 1 cup (recipe given below)
To prepare:
- Clean out your bread machine and check the settings. Mark the settings on basic bread cycle and the type of crust you like for your bread.
- In the clean bread pan, mix 1 cup of the flour, sugar, salt and yeast (do not use the warming cycle).
- While the cycle is still running, slowly add the milk and softened butter.
- While the machine is still running, add the sourdough starter.
- Now add the rest of the flour (do not mix) and close the lid of the bread pan, then let the machine run for its full cycle.
- Once the bread is done, let it cool on a wire rack before serving.
Sourdough starter: The sourdough starter needs to be at least a week old before use. Since it does not go bad, it can be stored in the fridge. Given below is a simple recipe for sourdough starter to make at home.
What you will need:
- All-purpose flour - 2 cups
- Sugar - 2 teaspoons
- Dry active yeast - 1 packet
- Warm water - 1 cup (115F)
Preparation:
- Mix the yeast with warm water and let it rest for some time until you get a frothy liquid.
- You will need a deep glass jar to keep the mix in as the starter rises with time.
- In the jar, mix the flour and sugar and whisk in the yeast.
- Cover the jar with a cheesecloth or a cling sheet and let it ferment at least overnight.
- Stir the starter at least 3 times daily and you will know it is ready to use when the bubbling stops.
- You can keep the starter in the fridge when it starts fermenting.
- Before using the starter, measure out one cup and let it come to room temperature before using.
- Sourdough bread's sourness will depend on the days of fermentation and the temperature of the starter.
This bread can be served with soups, salads and gravy dishes.

Ingredients
  • 1 chicken breast, cut into strips
  • 1 cup flour
  • 2 large eggs
  • 2 cups breadcrumbs
  • 1 tsp Italian seasoning
  • 2 Tbsp vegetable oil
Directions
  1. Whip up the 2 eggs in a small bowl so that the yolks and whites are mixed up.
  2. Pour the flour into its own small bowl
  3. Pour the breadcrumbs and seasoning into a separate bowl and mix them together.
  4. Coat each chicken strip in flour.
  5. Dip the flour-covered chicken strips into the egg, covering both sides.
  6. Cover the chicken strips in breadcrumbs by dipping the flour and egg covered strips into the seasoned breadcrumbs.
  7. Heat the olive oil in a frying pan over medium heat.
  8. Place the breaded chicken strips into the pan and cook in the hot oil for about 5 minutes.
  9. Turn the chicken strips over and cook for 5 minutes more.
  10. Remove the chicken tenders from the pan and allow them to cool slightly before serving.

Easy to Prepare Italian Sausage Bread

Giving a different twist to the traditional combination of sausages and bread, here is a mouth-watering Italian sausage bread recipe that you can prepare at home. This bread recipe uses prepared pizza dough, but if you have more time on your hands you can prepare the bread dough as well.
On your shopping list, you will need:
One regular pizza dough
1/2 kg of Italian sausages
1 teaspoon, or about 5 grams, of red chili flakes
5 grams of diced parsley leaves
5 grams of diced thyme leaves
150 grams of chopped onions (1 cup)
10 grams of yellow cornmeal
5 grams of chopped garlic
350 grams of grated mozzarella cheese
1 normal egg
2 tablespoons of water
5 ml of olive oil
Salt to taste
Prepare your oven before cooking the stuffing:
Preheat the oven to 180°C.
Take an 8x12 inch baking pan and bread sheet, and dust half of the cornmeal inside it.
To prepare the stuffing:
In a non-stick pan, heat the olive oil on medium heat (you could use regular refined oil, but Italian and olive oil sort of go together).
Put the sausages in the pan and let them cook for some time so that they are cooked from the inside and brown on the top. Keep turning in between to let them cook evenly.
Add the onions and let them cook for a few minutes until they are soft and translucent.
Add chopped garlic and let it cook for a few minutes.
Add the chopped thyme and parsley leaves to the mix and let them cook for a minute.
Add some salt and mix well so that the sausages are coated with herbs.
Add the red chili flakes, mix and take the mix off the heat.
Let the mix cool before using.
For the bread loaf:
Thaw the pizza dough.
Sprinkle the remaining cornmeal on a flat surface and knead the dough over it to a 10x14 inch rectangle.
Mix the egg with water.
Use this mix to brush the sides of the dough (one inch on each side).
Sprinkle half of the mozzarella cheese on the prepared dough.
Spread the sausage and herb mix on the cheese and sprinkle the rest of the cheese over it.
Roll the dough over the mix in a jelly roll style and seal the edges well.
Brush some of the egg white on top.
Bake in the preheated oven for about 40 minutes until the top crust is glossy golden brown.
Cool on a wire rack and cut in slices to serve.
You can serve this bread with butter, salsa and even as a side dish with gravy.

As far as the ratio of carbonated water to flavoring you will have to decide by taste but 2-3 ounces of syrup to 12 ounces of carbonated water is a good place to start. The key here is to experiment with different flavor combinations and see what you can come up with. Make it fun, and who knows maybe you will come up with the next great soda flavor.
If you would prefer to have someone else be the mixologist then you can try using a premade flavor instead. This will shorten the learning curve and you can certainly still experiment and come up with many different recipes.
