Healthy Pizza, Low Carb, Low Fat, High Protein

Healthy Pizza! Low carb, low fat, high protein
Most people like to get stuck into a pizza with extra toppings once in a while. But what if you are on a weight loss (Fat loss diet)?
Do you cut out your favorite foods all together? Or do you find an alternative?
Here is a healthy alternative to greasy pizza that you can eat on more than the odd occasion during your diet.

What You Will Need

Chicken breast
Tomato puree
Peppers
Olives
Spinach
Onion
Cheese
Mushroom
Sweetcorn
Oregano or mixed Italian herbs
Garlic powder or crushed garlic

You can add other favorite ingredients also, but be aware of this if you are dieting as all those extras can add up.

Putting Your Healthy Pizza Together
  1. First off, wash and flatten the chicken breast. Place the chicken breast on a flat surface and cover with cling film.Grab something heavy, a chair leg, bible, shoe... But a rolling pin would be ideal! Gently tap the chicken until it is about 1 cm thick all over. Take care not to damage the chicken breast too much as this will serve as our pizza base.

  2. Put a good helping of tomato puree into a bowl and mix in the garlic powder or crushed garlic to taste. (If you are not a garlic lover, you may want to skip the garlic, it is not essential but will really add to the taste)

  3. Go back to the chicken breast. I find that this method works better if you use the "underside" of the chicken breast i.e. not the smooth side. With the chicken breast flat on a surface, (Smooth side down), spread the tomato puree evenly over the full surface and put into a fridge while you prep the rest of the toppings. By doing this it gives the chicken breast chance to absorb some of the flavor.

  4. Slice the peppers, olives, onions and mushrooms and tear the spinach up into small pieces

  5. Take the chicken breast that you prepared earlier out of the fridge and sprinkle with oregano or Italian seasoning (This gives it a "Pizza" flavor)

  6. layer on the toppings. I find it best to layer on the spinach then peppers first. Then the rest of the topping on in any order.

  7. sprinkle with low fat grated cheese, this will bind the topping together. (You can put a small layer of cheese after the spinach and peppers but be aware of the amount of cheese you put on if you are on a fat loss diet.

  8. Cook in the oven on 180c for 30-35 mins or until the chicken is cooked thoroughly ( make sure that the chicken breast is cooked thoroughly before serving).

  9. I would serve this with a Jacket potato if I was not being "Carb conscious" but served on its own, this is low fat, low carb and high protein!

Easy English Muffin Pizza Recipe

Looking for a great idea for your child's lunch? Pressed for time during dinner? English muffin pizzas are a great idea. Cheap, fast and kids absolutely love them! You can keep it fresh and interesting by adding new toppings or keep it simple. We'll go over how to make them and some interesting ideas that I've experimented with. Let's get started.
You'll need:
1 English muffin, cut in half as evenly as possible.
Pizza sauce, you can get pizza sauce at your local super market.
Shredded mozzarella cheese
Start by preheating your oven to 400 degrees. While your oven is preheating you can sauce and cheese you pizzas. If your muffin isn't already cut in half, go ahead and do so. Try to cut the English muffin in half as evenly as possible to help them cook evenly. Scoop about 1 table spoon of pizza sauce on each half of your English muffin. Using the back of your spoon you can use a circular motion and spread your sauce to the edge of each muffin. You can use more or less sauce depending on personal preference. Next sprinkle just enough of your shredded mozzarella to completely cover the sauce on top of the pizzas. The English muffin pizzas should take about 6-8 minutes at 400 degrees, your looking for your cheese to be fully melted and starting to brown. Use a cookie sheet to make them soft and doughy or right on the oven rack to make them crispy. Let your pizzas cool for a minute or two before serving.
That's literally it! An extremely simple recipe that takes absolutely no culinary skill. If you decide to add toppings to your pizzas, I've found that loading too many toppings can cause your pizzas to cook unevenly and sacrifices quality. With that said here are some ideas I use to keep my pizzas interesting.
  • Spinach, bacon, feta, tomato - Crumble fresh baby spinach leaves, crumble pre cooked bacon, add feta and diced tomato
  • Buffalo chicken- toss pre cooked all white meat chicken breast in your favorite buffalo sauce
  • cheesy blend- mix and match your favorite cheeses( I do a mix of parmesan, romano, provolone and a teaspoon of ricotta right in the middle of the muffin)
You can get just about any topping at your local super market, from peperoni to anchovy, you can never go wrong with this one.

How to Make a Pizza - Step by Step

Pizza bases are very easily available in the market these days, however if you want to make them at home, here is the recipe.
Preparation Time: 25 mins
Baking Time: 5 to 7 minutes.
Baking Temperature: 150ºC
Makes 2 bases
Ingredients
2 cups plain flour (maida)
2 tsp fresh yeast, crumbled
1 tsp sugar
1 tbsp olive oil or any other
1 tsp salt
Method
Combine all the ingredients except the olive oil in a bowl and knead into a soft and pliable dough using enough water.
Add the olive oil and knead again.
Cover the dough with a wet muslin cloth and allow it to prove till it doubles in volume (approx. 15 to 20 minutes).
Press the dough lightly to remove the air. Divide the dough into 2 equal parts.
Roll each portion into a circle of 250 mm. (10") diameter and 6 mm. (1/4") thickness.
Prick each circle 4 to 5 times with a fork. If you wish to make your pizza in a pan on the gas, use at this stage.
Bake at 150ºc for about 5 to 7 minutes.
Tips
Fresh yeast can be easily purchased from your local bakery in small quantities.
You can also use half the quantity of dry yeast instead of fresh yeast for the above recipe and follow the instructions on the packet.
You can also use a ready pizza base for any pizza.
NOTE: This pizza base can be topped with your favourite toppings.
Ingredients (serves 4)
160ml (2/3 cup) passata (tomato pasta sauce)
2 x 225g pkts Boboli 97.2% fat-free pizza bases
2 zucchini
16 (about 450g) green prawns, peeled leaving tails intact, deveined
120g fresh low-fat ricotta, drained on paper towel
20 small fresh basil leaves
Preheat oven to 220°C. Place 2 baking trays in oven to heat. Spread the passata evenly over the pizza bases.
Use a vegetable peeler to slice the zucchini lengthways into long, thin ribbons. Place the zucchini on the pizza bases. Arrange the prawns among the zucchini. Crumble the ricotta into large pieces and scatter over the pizzas.
Remove the baking trays from oven. Place the pizzas on the baking trays and bake in oven, swapping trays halfway through cooking, for 15-20 minutes or until the prawns curl and change colour and the bases are crisp and light brown.
Scatter the basil over the pizzas and serve immediately.

Old Fashion Salads Add Pizazz to Modern Meals!

Salads can be great as a meal or as a side to a meal. These old fashion salad recipes include recipes for salads using Veggies, Tuna, and Fruit. There is bound to be one you and your family will love! Let's start out with the Tangy Vegetable Salad which is one of my favorites. Since I am a gal who loves her vegetables, this has been one of my favorite salads for many years. I think one of the reasons I love vegetables so much is because I was raised in the country where we grew most of our vegetables. I loved helping plant the seeds, watching the plants grow, and waiting with great anticipation to enjoying the vegetables when they were ready. I also loved helping my mother and grandmother can the vegetables then enjoying them on cold snowy days in the wintertime. I believe my love of vegetables was planted early and I know it runs deep. Now that I am a diabetic, I have changed the sugar in this recipe to Splenda granulated. It is still just as good. However, I am printing my original version here for you. Personally, I do not like tuna but my family does. I like this Veggie Tuna Salad recipe because it gets them to eat their vegetables, too! The Pretty Peach Salad makes a great addition to a buffet table or to a salad bar.
TANGY VEGETABLE SALAD
1 can baby peas
1 can Shoe Peg corn
1 can French-cut green beans
1/2 cup chopped celery
1 chopped onion
1 bell pepper, chopped
1/4 cup oil
1/4 cup vinegar
1/4 cup sugar
Drain all the canned vegetables then mix all the ingredients together in a bowl with a lid. Place lid on bowl and refrigerate several hours or overnight.
This makes a great 'make ahead' dish for busy cooks.
VEGGIE TUNA SALAD
1 can (6.5-oz) tuna, drained
1 cup shredded carrots
1 cup diced celery
1/4 cup minced onion
1 cup mayonnaise
1 can (4-oz) shoestring potatoes
In a large bowl use a fork to flake the tuna. Add the carrots, celery, onion, and mayonnaise; toss until the tuna is coated thoroughly with mayonnaise. Place in a bowl with a lid, cover, and refrigerate. Just before serving time, remove from the refrigerator and fold in the potatoes.
Serves 4 to 6
PRETTY PEACH SALAD
4 fresh or canned (drained) peach halves
2/3 cup cottage cheese
2 tbsp toasted slivered almonds
2 tbsp drained and chopped maraschino cherries
4 tbsp flaked coconut
crisp salad greens for lining plate
In a medium bowl, mix the cottage cheese, almonds, and maraschino cherries until combined. Arrange the peach halves, centers up, on a salad greens lined plate. Divide the cottage cheese mixture evenly and fill the centers of the pears. Sprinkle the coconut over the top.
NOTE: If using fresh peaches, dip in lemon juice or sprinkle with fruit fresh to keep them from turning dark.
Also, this same recipe works great using pears instead of peaches.
