Quinoa is fast becoming very popular in both the health and weight-loss worlds, so we thought we would suggest a few very easy-to-follow quinoa recipes that make your meal times that little bit tastier than simply boiling the rice grain. Cooking quinoa is very easy, hope you enjoy these and they at least give you some inspiration as to what you can do with this new super food and how to cook quinoa properly.
Quinoa recipes: No.1: Breakfast porridge.
Ingredients:
2 cups quinoa, ½ pint water (or milk), a handful of sliced or crushed almonds, honey or jam.
Instructions:
The first things you need to do are wash and rinse the quinoa grain to remove all debris and coating on the seed. Place in a pan of water (can also try boiling it in milk for extra flavour) and bring to the boil, turn down the heat and gently simmer for 20-30 minutes stirring occasionally. Transfer to a serving dish and add a few almonds (either crushed or sliced) and serve with honey or jam.
Quinoa recipes No. 2: Quinoa Paella.
Ingredients: For 2-4 servings
2 cups of quinoa, one red onion (chopped), two (crushed) garlic cloves, 1-2 teaspoons of Saffron (preferably pre-soaked in warm water), 3 cups vegetable broth, one (chopped or sliced) red and green peppers, 1 cup green peas, 1 lime, salt and pepper and finally olive oil.
Instructions:
Warm through some olive oil in an average size pan and throw in both the chopped onions and the crushed garlic. Add both green and red chopped peppers and continue to stir. When these ingredients start to soften then add the quinoa rice and fry for a couple of minutes. Next add the green peas and the soaked saffron to the mix, and finally the vegetable broth. Bring to the boil then turn down the heat and gently simmer for approx 15 minutes. Transfer onto serving bowls and serve with a wedge of lime.
Quinoa recipes No. 3: Quinoa veggie soup.
Ingredients:
1 cup quinoa, vegetable broth 5 cups, 3 cups water, 5-10 sliced mushrooms, 2 large plum tomatoes (chopped), 1 carrot (diced), 1 stick of celery (diced), 1 finely chopped onion, 2 crushed garlic cloves, 1 green pepper (chopped and seeded), small head of cabbage (chopped), vegetable oil, small bunch parsley, salt and pepper.
Instructions:
Warm through the vegetable oil in a medium-sized pot, add the following contents: quinoa, diced celery, mushrooms, diced carrot, chopped onions, chopped peppers and crushed garlic. Fry for a couple of minutes until they begin to soften, then add the vegetable broth, chopped tomatoes, chopped cabbage head and water. Bring all the ingredients to the boil and then turn down the heat and simmer for approx 15 minutes. Add a pinch of salt and pepper for flavour and then serve. Garnish with parsley for visual effect. Serves 2-4 persons.
Quinoa recipes No. 4: Vegetarian Quinoa Recipe.
Ingredients:
2 cups of water, 1 teaspoon of sesame oil (preferably un-toasted) if not then you can simply use olive oil, 1 cup quinoa grain (please use a dry measure of grain after you have been through the wash and rinse process) a pinch of sea salt, 5 medium-sized mushrooms (sliced ), 1 large yellow pepper (diced ), 4 chopped bok choy leaves, 1 clove of crushed ginger,1 teaspoon toasted sesame oil, 1 lime (zest and juiced) 2 Tablespoons tamari (or soy sauce)
Instructions:
Add the 2 cups of water to the dried quinoa grain and a pinch of sea salt, bring to the boil and then simmer for 20-30 minutes. Whilst you're cooking quinoa there is no need to stir it. You will know when it is cooked correctly as you will visibly see the translucent centre of the grain as well as the swirl pattern on the grain itself. Heat another medium-sized pan and pour in the sesame oil (un-toasted) and the sliced mushrooms, cook until soft. Next add the diced yellow pepper and stir together with the mushrooms and again cook until they become softer. Add the bok choy leaves to the mix and cook further until the green parts of the leaves begin to wilt, then add the lime zest together with the crushed ginger and a pinch of sea salt to flavour and stir all contents taking care not to make everything mushy. Finally, transfer the cooked quinoa from the first pan into the cooked vegetables and add the tamari, lime juice and sesame oil continuing to stir ingredients.
There are many different types of meals you can do with quinoa, it is great for breakfast recipes, snacks, lunch meals and main dinners, it really is that versatile and can be mixed with almost any other ingredient that you would associate with a normal rice dish.
Please enjoy these four lovely quinoa recipes and feel free to experiment with cooking quinoa and other ingredients; you will be surprised just how versatile quinoa actually is.

Lobster Bisque Soup Recipe

By

Photo: redlobster.com

Lobster Bisque Soup will set you back quite a bit for those who order it in a very fancy restaurant; luckily it is possible to make it in your home! This particular recipe for Lobster Bisque soup is easy to create and very delicious. As a result of the thickness of the soup, a serving of about 2/3 a cup per person will be enough. This easy Lobster Bisque Soup Recipe can easily be made in less than an hour.
Ingredients you need to make this lobster bisque:
  • 2 pounds boiled lobster (takes about 13 minutes to boil 2 pounds of water)
  • 2 1/2 cups fish or chicken stock
  • 1 sliced onion
  • 4 stalks of celery with leaves
  • 2 whole garlic cloves
  • 1 bay leaf
  • 1/4 cup soft butter
  • 1/4 cup flour
  • 4 cups heated milk
  • 1/4 teaspoon nutmeg
  • 1 cup hot cream
  • 2 tablespoons sherry
  • 1/8 teaspoon minced parsley
  • 1/8 teaspoon paprika
Once you have your ingredients ready, step one will be to remove the meat from the lobsters. Next you want to dice the body meat and mince inside the tail and claw meat then put them the side for later. A wonderful way to add flavor to your soup will be to crush up the shells of your lobster to be used when producing the stock.
Now it's time for you to create the stock for your lobster bisque soup. In a medium sized pot, mix up the lobster shell, onion, celery, cloves, and bay leaf. Let this simmer for a half-hour, then strain the stock.
When the stock is just about done you might want to start on the next phase. Cook the flour and butter in a sauce pan for five minutes, ensure that the flour doesn't color within this stage. Slowly pour your heated milk into the mixture and whisk until its combined and add in the nutmeg. After things are all mixed, stir in the strained stock.
When the soup becomes smooth and boiling, you have to mix your lobster meat and sherry and let it simmer covered for 5 minutes. After 5 minutes, turn off the heat and stir in the cream and season with salt and pepper. When you serve, add in the minced parsley and paprika and enjoy.
The best way to serve a lobster bisque soup is with some good bread or crackers. Chilled Chardonnay goes really well with lobster bisque.

Yummy Winter Beet and Comte Cheese Salad

By

Photo: 1.bp.blogspot.com

Grammy & Finding Solace in the Kitchen...
I have found solace in the kitchen since I needed a step stool in my great-grandmother's Missouri home. Grammy would stand me at the sink and I'd wash potatoes, greens, and carrots. She taught me to fill the sink and get to work without complaining. "It ain't gonna git done on its own", she'd say.
And she taught me how to dance. I didn't know it at the time, (sneaky ol' bird) but she'd fill a glass jar with cream, hand it to me with a beautiful southern drawl.."Shake it up--shake it as hard as you can!", she'd say.
And I'd dance and I'd shake until my arms about fell off. I had no idea I was making butter. Grammy had a way of telling you what you did AFTER you did it.
Fast forward 40 years, and I think of her when I make this salad on cold winter days. Simple acts like washing the beets for the salad recipe below bring me comfort. Their earthy flavor and deep red hue speak to me about the inheritance our families pass to us.
It is my view that home-cooked meals & gathering around the table as a family are somewhat forgotten jewels, buried deep under crazy schedules, hectic deadlines, and the drive-through's of our society. Grammy's generation wouldn't understand ours today, not that she'd want to. She made almost everything in her home from scratch, and we still had time to rock on the front porch every night.
I aim to create a family lifestyle which abhors the hasty, pre-made, selfish culture surrounding us. I want my family to learn healthy food choices through my actions. My inheritance to my son will be the same one that Grammy blessed me with--cooking. We might not make butter, but we'll find our solace in the kitchen and find time to rock on the front porch.
I'm going to do what we all know we need to do. I'm going to take a daily personal interest in my family, and cooking will become our shining jewel.
Grammy, I love you---I hope you're giggling at those good ol' times...
Beetroot/Comte Salad:
Boil for ~20 minutes, or roast for ~45 beets thoroughly, so that a sharp knife slides into them easily.
Slice Comte cheese thinly
Plate, heat for a few minutes to melt the Comte cheese, then add S & P.
A bit of olive oil may spark your taste buds, if desired.
Comfort through Family.
Remedy through Food.

Long Live The Pasta Salad

By

Photo: iowagirleats.com

Pasta has been around for years and years and has found its way into many of the popular dishes that we now know as comfort food. What would lasagna or ravioli or even spaghetti be without our friendly neighborhood pasta. This is where it is normally found and in all honesty, it will probably hold this title for may years to come. But there is another way to enjoy pasta. A must more sublime and ingenious way, and a way more healthier to boot. What is that way you ask? Via pasta salad is my answer. If you are not yet a fan of this great form of pasta I hope to convince you of it. Let the journey begin...
How many times have we had a nice Italian dish of pasta and felt bloated and tired afterwords? This is a very common reaction to taking in all those carbs and proteins and fats during that special holiday meal or family function. Wouldn't it be nice if there was a way to have that fantastic same pasta taste but in a much healthier format? There is...via the pasta salad.
In a pasta salad there is pasta to be sure, but notice the second part of the term. That's right, salad. When you think of salad you think of lettuce and broccoli and tomato and celery. Perhaps some olives and pickles to top it off. When compared to meats and dairy and fats which is healthier for your body? You only need to check out any diet plan or calorie chart to figure that out. The body loves the roughage and high water content of vegetables, and they are readily available in the great combination that is known as the pasta salad.
Let's not stop here. We can add pasta and veggies to be sure, but there are so many other ways to top off the great pasta salad and make it all that more special. If you want to go the low calorie route there is always balsamic vinegar or perhaps a few squeezes of lemon to make it special. If you have had a hard workout or tough day you can kick it up a notch by mixing in some mayo or a heavy cream sauce. The pasta salad is your friend and is there to make you happy. You only need to ask.
There is so much I can write about in regards to the healthy pasta salad I'm afraid that I don't have time in this article. Come on over to my website for more details...
If you would like to learn more about the Healthy Pasta Salad I would love to introduce you to my website at HealthyPastaSalad.net I will go into much greater detail on this subject to help you gain better understanding. See you there!

World's Most Popular Cakes

By

Photo: podcast.ukma.kiev.ua

Cakes are probably one of the best inventions in the world. Perhaps the best invention since sliced bread - and not before because many cakes are reliant on bread for their mixture. There are countless different types of cakes and they are perfect for a range of different situations and to celebrate a range of different special occasions. It's not coincidence that it's traditional to enjoy cake on a birthday or at Christmas - it's because this is one of the most enjoyable and decadent ways to eat for a special occasion. Cakes are the bane of dieters and while many people have difficulty giving up their chocolate and alcohol, it's often the cakes that they really can't stop cheating with and that they find themselves constantly steeling slices of.
There are also many different kinds of cake and different people will have different favorites. There is no one who doesn't like cakes, because there are so many different kinds of cakes that you will be sure to like at least one of them.
Being able to supply cakes is something that everyone needs to be able to do to make a good host. If you want to make someone feel happy and comfortable in your home then offering them cakes is ideal. It's the perfect desert for after dinner and is expected to a degree, and if you don't offer a cake many people will be disappointed. Finally you need to be able to offer cakes on birthdays and Christmases and if you're a parent this is especially important.
To offer the most popular cakes you need to find either the best cakes manufacturer in your area, or you need to learn to make them. You also need to know which cakes are the most popular ones that you are likely to have the most luck with. Here are some of the world's most popular cakes to help you choose.
Chocolate Cake: This is the truly indulgent cake for those who aren't watching their weight. The combination of chocolate, sponge and icing is one that is hard to resist and just the texture of the creamy chocolate on the top and in the filling is enough to make most grown adults drool.
Sponge Cake: Sponge cake is light and sweet and this makes it perfect comfort food that doesn't leave you feeling very stuffed and heavy. It also goes perfectly with custard, and can form the basis of many other kinds of cake.
Apple Crumble: Many people like apple crumble because it allows them to believe that they are getting one of their five a day (though it's nice, attempts to convince yourself that apple cakes are healthy are somewhat futile). While this isn't true however it's certainly healthier than a lot of other cakes and it is also sweet in the natural and delicious way that apples are.
Carrot Cake: Many people are confused by the fact that a cake can contain carrot - a vegetable - and still be tasty. Actually though this contrast works perfectly and you'll find that it is completely delicious and something a bit different and not quite as sickly as many other cakes.
One thing I don't often look forwad to is birthday cakes that look good but don't taste yummy. I think the taste is more important, even when it comes to wedding cakes.

Salmon Sushi

By

Photo: healthyjunkie.files.wordpress.com

Salmon sushi is becoming more common. Sushi itself has become increasing popular in the United States within the past thirty years. It's decorative design and array of possible ingredients makes it a benefit to any party. The number of ingredients that can be used in sushi is practically endless, however, salmon is a very popular ingredient and for many good reasons.
Sushi is in itself a nutritious food choice. It is low in artificial substances and low in sugars. Sushi can be made with different flavorful and nutritious vegetables and fishes adding to its appeal. Salmon is a good addition for sushi because it is highly nutritious even by itself.
Studies have shown that salmon is high in Vitamin D. This is very important especially during the winter months when the sun is not around to give its high amount of required vitamin D. Salmon is also high in Magnesium and Selenium and, of course, Omega 3 vitamins and minerals. An added benefit of eating salmon is that it is low in Mercury.
Sushi lovers often choose salmon for its taste. Salmon, with its light pink color, is not a heavy fish. It doesn't smell fishy or taste heavy. It is soft and light and delicate. There are also many versions of salmon a person can use for their sushi. Fresh salmon is, of course, an excellent choice, however it is good not to overlook the benefits of smoked salmon or canned salmon as well.
There are many ways you can eat salmon with your sushi. You can add salmon to your basic sushi ingredients of flavored rice and nori by adding the salmon in the sushi roll. You can also add in other vegetables to the roll. Popular vegetables include sliced cucumbers or carrots. Another option would be avocado and salmon rolls. Probably the most popular choice would be salmon and cream cheese sushi rolls. The combination is endless. Whatever you like with salmon, can be rolled into sushi.
Another option for salmon sushi it to mix tiny pieces of smoked salmon into the prepared rice and vinegar and roll it with the nori wrap. This is simple and mixes the flavors of the salmon and rice very well. It is a particularly good choice for those who really do not like to eat much fish, but know they should because the flavors are more subtle in the salmon and rice mixture.
If you love the taste of salmon, just placing a square of fresh raw salmon over a ball of rice mixture and covered with a small bit of nori can be a perfect appetizer. Sushi salmon is a tasteful treat for any sushi lover. Just remember to follow all safety guidelines for serving raw fish.
Alan Stables is a fan of sushi. Sometimes he likes to buy all the sushi ingredients himself to make his speciality, salmon sushi , and other times Alan is quite happy to get a sushi takeaway. Either way Alan just loves the world of sushi.
